After hand harvesting, the grapes were crushed and pumped into drainer tanks and cold macerated for a 48 hour period on the skins. After pressing, the coloured juice was clarified and then racked to tank for fermentation. To preserve the natural fruit flavours, cold fermentation and neutral yeasts were employed. The wine was then lightly fined and filtered to bottle.Alcohol: 11.7%
WinemakingWinemaker’s Notes

Winemaker’s Notes
Aromas of white peach, honey and spice dominate the bouquet. On the palate it is powerfully concentrated with nutty and fleshy fruit flavours. It is a wine that is rich, full and soft in texture with many exotic nuances, a reflection of the very low yield.Food Pairings
